Looks like I'm heading to TO for a week at the end of August for a wedding. If the Island will let me I'll just sleep there. Any other courses in southern Ontario that I should hit?

I like Bronte a lot. Senor KL0X hatess Christie Lake, but it might feel a lot like home to you. Annandale was meh, but it has carts, so that's pretty cool.
You're not technically allowed to camp on the island, but there are secret ways.
You should look up Dusty Fournier while you're in that part of the world. (He's the PDGA coordinator for Ontario and is an awesome dood.)

I don't think I've had the pleasure of playing Midland, but I am pretty sure Ken could tell you about it. Let us know what it's like if you do!

Midland is an awesome course. Also some nice local players who are mostly teachers. They are a great example of starting a course beginning with nothing.
